He believes in using locally sourced ingredients including natures own, found in the Galil. His emphasis is on high quality meats and at Tibi's he produces his own sausages and cures meats in his kitchen.
His menu is described as rustic bistro, specialising in steaks, burgers, locally caught fish and his homemade pastas. His salads are fresh, interesting and full of fresh herbs and flowers from the grounds, giving the presentation of his dishes a contemporary feel.
Desserts are equally delicious as he puts his own twist on classics such as lemon meringue pie, garnished with flowers that bring the dishes to life with their colours.
The wine list is comprehensive, ensuring that all the dishes can be accompanied by a well matched wine from his cellar.
It is usually fully booked, so advisable to book ahead, if you are not staying in Vered Hagalil, as this internationally acclaimed chef just seems to have got his restaurant 'just right' for all ages and palates, and all reasonably priced.
